When I want a fall type soup, I think of the creaminess of broccoli and cheese soup. I have a go to recipe for cheddar cheese and broccoli soup that I make at home without a lot of ingredients. Everyone, even the kids!, love this soup. I love it even more because it is done in less then an hour!
Cheddar Broccoli Cheese Soup
You will need:
-4 heads of broccoli, chopped
-2 cups onions, chopped
-4-6 cups water
-2 cans cream of celery soup
-2 cans cheddar cheese soup
-1 can cream of mushroom soup
-16 oz. package of Velveeta cheese, chopped
Start by mixing the chopped broccoli, chopped onions, and water (for creamier soup add 4 cups of water, for a less thick soup add 6 cups of water) and bring to a boil.
Allow the mixture to boil for 5 minutes.
Pour the cans of soup into the mixture and stir with a slotted spoon or whisk (I find using a whisk helps break up the condensed soup and mixes much better than when using a regular spoon). Stir until mixed and turn heat to low.
Then, slowly stir in chopped Velveeta cheese (I let it sit for a minute or so before mixing so the cheese has time to melt a bit and it will be easier to mix).
Make sure everything is mixed well and serve!
I like to serve mine with buttered bread or french bread. Another alternative you could do is to get thickly cut ham from the deli and cut into small pieces when you get home and add it at the end.
