December is going by too fast!

Wow, I know it is only a few weeks into December, but it seems like it will be over in a blink of an eye! I mean in 2 weeks it will be Christmas!

I have to say, that even though it is going fast, December has been good to me. I just feel so thankful for all of my family and friends. Not that I am not thankful for the people in my life everyday, but on my birthday it just made it more of a realization. My cousin who lives in California came to town for a wedding that she is in and she orchestrated a nice birthday get together. I was even surprised when two of my other cousins from Michigan came down to celebrate with me.
Sometimes I just think that I don't deserve all of the nice things that people have been doing for me. Not that I am a bad person, but sometimes I just wonder-why me? My friend pointed out that when I do good to others, they will do good to me. I really try to do onto others as I would like them to do unto me. Which brings me to say- THANK YOU THANK YOU THANK YOU for everyone who has been present in my life. It means more to me than any gift you could give.
Even though it was my true birthday the 9th, my bestie is going to have a full out blast later in the month. Not sure what is going on with it, which is hard for me because I usually get into planning my own stuff too much sometimes! I do know we are going rollerskating! I will just be glad to have some fun with people that I love! 

Now that the Christmas season is here, I mentioned before I was looking for presents to give to my kids' teachers. I was going to go with the soup mixes, still might, but I came across this recipe for Brownie Covered Oreos (yep read it again!) on one of my FAV! websites- Picky-Palate.com. She has the most unique and easy recipes I have ever seen, especially desserts. Here's how it went:


Brownie Covered Oreos



  • 1 Brownie mix (or use your own brownie recipe)
  • 1 package Oreos, I used the Holiday ones
  • White chocolate, melted for drizzle
  • Sprinkles


I began by mixing the brownie mix.

Then you add the Oreos to the batter. This part gets a little messy, you can use your fingers (and lick them later) or you can use a fork.




I then put the covered Oreo in a generously sprayed muffin tin and cooked for 15 Minutes at 350 degrees. I have a tendency to overcook brownies, so even though they looked a little "soft" on the top after the 15 minutes, I still took them out and they settled great!



 Yum! Before they are transformed into the finished product.



I melted the white chocolate over a double boiler with a glass bowl. When melted, I took off the heat, dipped a spoon in the chocolate and drizzled over the top of the brownie. I then took my green sprinkles and put them on top of the white chocolate. *You can use any color sprinkles, I just had Green handy
I let them cool and began setting up the bags for my son B's preschool teachers.

They were so easy to make and something unique to give to a teacher, friend, or cookie swap!



Brownie Covered Oreos

1 Brownie mix (or use your own brownie recipe)
1 package Oreos, I used the Holiday ones
White chocolate, melted for drizzle
Sprinkles
1.  Preheat oven to 350 degrees F.  Prepare brownie batter according to package directions.  Leave in mixing bowl.  Dip Oreos in brownie batter then place in bottom of cupcake tin that have been generously sprayed with cooking spray
2. Bake for 12-15 minutes, until brownies are cooked through (doesn’t take long).  As soon as you remove, take knife and run along edges, (this is VERY important so you get the cookie out with brownies not stuck to pan)
3.  Let cool for 5 minutes, remove drizzle with melted white chocolate sprinkle and EAT!  Enjoy :)
